David Wilcox of Two Rose considers his next act

I’ve been an unabashed fan of Two Rose, the MEHKO-certified backyard bakery run by former Hail Mary owner David Wilcox, since he first started selling breads to Proof last year. And I’m not the only one—Bill Addison, Tejal Rao, and Jessica Koslow are just a few high-profile fans, along with the hundreds of people who line up every weekend for a crack at Two Rose’s long-fermented whole grain pain de campagnes and experimental Pullman loaves, sweet corn and leek scones, and lamb sausage pizzas (among other things).

So when Wilcox announced on his Instagram Stories a few weeks ago that Two Rose will break its last bread on August 23rd, I was quietly devastated. But while details are scant at the moment, it’s reassuring that the legacy of Two Rose will continue on under a new name, as two of Wilcox’s current baking partners have bought much of his equipment and plan to relaunch in a new location in coming months (more details on this as I have ‘em). And after talking to the ever-thoughtful baker about why, why now, and what’s next, I have a deeper understanding of what my favorite Beatle has been saying: all things must pass.
